Beyond the Chop: A Butchery Demonstration on Lesser-Known Cuts of Lamb

Curious about butchery but not sure where to start? Join Slow Food Edinburgh for a hands-on evening designed to demystify home butchery and inspire confidence in the kitchen. In collaboration with master butcher Gordon Newlands and with support from Quality Meat Scotland (QMS), this unique event will spotlight the lesser-known cuts of lamb—flavourful, affordable, and perfect for home cooks looking to get more from their meat.

The evening will begin with a warm welcome and a refreshing seasonal non-alcoholic drink, before settling in for a detailed, step-by-step butchery demonstration led by Gordon Newlands, master butcher and QMS representative. With a practical focus, Gordon will show how to break down a lamb carcass using techniques and tools that can be adapted for the home kitchen. You’ll learn how to identify value cuts, understand their uses, and discover how whole-animal butchery supports a more sustainable and ethical food system.

Following the demonstration, there will be an opportunity for Q&A. The evening will conclude with a tasting session featuring sample dishes highlighting these underused cuts, alongside flavourful conversations with like-minded food enthusiasts
