Beyond the Chop: A Butchery Demonstration on Lesser-Known Cuts of Lamb

Wednesday 28th May 2026, 6-9pm, Edinburgh New Town Cookery School

We’ve hosted a hands-on evening aimed at demystifying home butchery and boosting kitchen confidence. Held in collaboration with master butcher Gordon Newlands and supported by Quality Meat Scotland (QMS), the unique event focused on showcasing flavour-packed, affordable, and lesser-known cuts of lamb.

Event Highlights

Welcome Drink: Attendees kicked off the evening with a warm welcome and a refreshing seasonal, non-alcoholic drink.

Masterclass Demonstration: Gordon Newlands led a step-by-step demonstration on breaking down a lamb carcass. He shared practical techniques and tool tips adapted for home kitchens, emphasising how whole-animal butchery supports an ethical and sustainable food system.

Q&A and Tasting: The event concluded with an interactive Q&A session followed by a tasting of dishes made from the featured value cuts, giving guests a chance to connect over a shared passion for food.
